Do you enjoy baking cookies? Are you looking for new recipes? Well, Sister Patricia has plenty of cookie recipes to recommend! In the convent, the sisters take turns cooking dinner. When it is Sister Patricia’s night, she likes to add a dessert to the meal. Her favorite cookies include Cranberry White Chocolate Chip, Espresso Chocolate Chip, and Iced Oatmeal.
She doesn’t make these recipes herself. Instead, she finds them online. She likes to scroll through Pinterest to find new and creative ideas. Although she doesn’t bake cookies from scratch, she has a secret tip. She suggests using cornstarch as it makes a cookie chewier. She prefers soft, rich, and melty cookies.
Sister Patricia has strong opinions on cookie textures. She states, “Crunchy cookies need to go. They only belong with coffee.” She believes homemade cookies must be soft. Crunchy cookies are acceptable for store-bought packaged cookies. If that is the case, they should be paired with a drink. Sister Patricia personally enjoys coffee from Starbucks. She is not the biggest fan of Dunkin’ Coffee.
While she likes all cookies, Sister Patricia doesn’t understand the appeal of snickerdoodles. She believes they are a complete waste of a cookie, “If you want to have cinnamon, then just have a cinnamon roll.” She is also not fond of shortbread. A fun fact she mentioned was traditional shortbread recipes don’t use eggs.

- 3/4 cup unsalted butter at room temperature
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 Tbsp vanilla extract I like to use Madagascar Bourbon
- 1 egg
- 1 large egg yolk
- 2 cups all-purpose flour plus 2 tablespoons
- 2 tsp cornstarch
- 1 tsp baking soda
- Pinch salt
- 1 cup dried cranberries
- 1 cup white chocolate chips
Espresso Chocolate Chip (from Broma Bakery)
- 3/4 cups unsalted butter, browned and cooled
- 1 cup dark brown sugar, packed
- 1/3 cup white sugar
- 1 egg + 1 egg yolk, room temperature
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 1 3/4 cup all-purpose flour
- 1/4 cup espresso powder
- 1/2 teaspoon baking soda
- 4 ounces dark chocolate, roughly chopped
Iced Oatmeal (from Sally’s Baking Addiction)
- 2 cups old-fashioned whole rolled oats
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 and 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup unsalted butter, softened at room temperature
- 1 cup packed light or dark brown sugar
- 1/2 cup granulated sugar
- 2 large eggs, at room temperature
- 1 tablespoon unsulphured or dark molasses
- 2 teaspoons pure vanilla extract
